一道素菜,最基本的原则就是多样,最佳的蔬菜好比:炒杂菜、大拌菜,总之就是种类越多越好,而且颜色越厚实越好,每餐都要有,一天的量保证500g。
一道菌菇,可以是木耳、银耳,各种蘑菇,如:香菇、草菇、牛排骨、羊肚菌、牛肝菌、鸡纵菌、猴头等等,实在菌菇不仅仅营养种类厚实,尤其是蘑菇中的蛋白质也异常的厚实,好比双孢菇中的蛋白质含量,每100g中的含量是瘦肉的2倍,是鸡蛋的3倍,牛奶的12倍,另外还富含多种维生素,多糖类等身分。
而对于蘑菇来说,不仅营养厚实,蘑菇中另有许多的呈味物质,这让蘑菇的味道异常的鲜美,不仅蘑菇自己的味道鲜美,还能在烹饪中发挥作用,好比炖汤的时刻,加入菇类,可以让汤加倍鲜美,还能增强食欲,别有一番风味。也正是由于这样,每到春秋吃蘑菇的季节,也总有人想要尝鲜而吃到毒蘑菇。
可能许多人会说,蘑菇不容易做,实在没有想象的那么难,蘑菇也好,木耳银耳也好,做法都很简朴,做汤、炒菜、炖菜、凉拌等都可以。更主要的是,现在有许多蘑菇干,易于保留,吃之前只要提前泡一下即可。而好的木耳,一样平常有个10~15分钟,常温水就可以泡开,即便早上吃,洗漱摒挡的时间,也够了。
